Coconut Almond Granola
Ingredients:
3 cups rolled oats
1/2 cup unsweetened coconut flake
1/2 cup raw almonds
1/4 cup craisins [or other dried fruit]
1/2 tsp. ground cinnamon
2 Tbsp. oil [I used canola]
5-6 Tbsp. honey/or agave syrup
1 tsp. vanilla extract

Instructions: Preheat oven to 350. Mix the first 5 ingredients together in a large bowl, omitting the craisins. In a small saucepan over medium low heat, warm the oil, honey/or agave {I use agave} and vanilla extract. Pour the liquid over the dry ingredients and mix well. Spread the mixture evenly onto a baking sheet and bake for 25 minutes, stirring a bit near the halfway point. Then, add the craisins.
Once the granola is visibly browned, remove from the oven and scoop into a bowl to let it cool. Then place in a container that has an air-tight seal. Should keep for a few weeks.
In the summer, I love mixing mine with plain greek yogurt and blueberries. SO delicious.
