Almonds are one of my favorite snacks. They are naturally gluten-free, and they taste amazing mixed with almost any type of spice. I like to buy the big bags from Costco, and then either roast them plain, or create a new almond recipe to mix things up. A few years ago, I made these almonds and gave them away as gifts, and everyone seemed to love them {who doesn't love anything with almonds and sugar though, right?}. They seriously taste like mini cinnamon rolls, I'm not even kidding. They are that good. They're quick, easy, and most likely you already have the ingredients to make these in your cupboard.
Cinnamon Sugar Almonds
{Ingredients}
1 cup of sugar
1/4 cup water
1/2 tsp of cinnamon
3 cups of plain almonds
Combine all of the ingredients into a large saucepan. Cook the almonds on medium-high heat, continuously stirring the almonds and the sugar mixture. Continuously stir until the mixture starts to crystallize on the almonds {5-10 minutes later}. Immediately transfer the almonds onto a sheet of wax/parchment paper. Let the almonds cool. They should be ready to eat/baggy/gift/whatever you choose to do with them, in 30 minutes. Enjoy!

These look amazing! Found via Pinterest. A quick question about the almonds: should they be already dry roasted? I buy almonds from Costco that aren't roasted yet because I like to do them myself (much better flavor, imho), but they cook for like an hour in oven, so I'm thinking 10 minutes on the stove is just to crystallize the sugar, not cook the almonds, right?

ReplyDeleteANYway, I made these last night and hubby and I ate like 2 c. before we noticed how far we'd gone. YUM! I did roast them in the oven before with a little bit of EVOO and kosher salt and that was very tasty. Definitely a repeat. Love the smell of them cooking with the cinnamon! Thank you!!
I used blanched almonds. They're not as dark as the finished picture but taste great. Am I using the right almonds?
